How to | Funfetti Cupcakes

I know it's still early in the year and we have not long ago eaten our body weight in food over the Christmas holidays but who can resist a little cupcake, especially ones as fun and colourful as these.
I love Funfetti cakes, they are typically a very American cake as we don't tend to put sprinkles inside the batter but aren't they just the cutest?


So here's how to make them..

You will need -

170g unsalted butter or margarine (I like Stork!) 
170g caster sugar
3 medium eggs
170g self raising flour
1 tablespoon vanilla extract
Splash of milk
Rainbow confetti/ jimmies sprinkles
250g unsalted butter (for the buttercream)
500g icing sugar 
12 cupcake cases

Preheat the oven to 190 degrees celsius before you start and line a muffin tray with your cases. I think white ones work best for these so you can see the sprinkles through the cases but you can choose whatever ones you like. 
If you have a blender you can pop all the ingredients in together and just mix for about 5 minutes, but if not then cream the butter and sugar together first before adding both eggs. Next up is the flour which you should add a little at a time to ensure your kitchen isn't completely covered in white dust and you don't end up looking like Casper! Then add in the vanilla, as many confetti sprinkles as you like and just a splash of milk, you should then have the perfect consistency.
I like to use an ice cream scoop to transfer my batter to the cases because then your roughly using the same amount in every one.
Bake for 15-20 minutes or until golden brown, it helps to use a skewer to check they are done by popping it into the middle of the cake, if it comes out clean they are good to go! 


Leave them to cool for about an hour, in the meantime you can make the buttercream frosting which is super easy. Just cream your butter and icing sugar together, preferably with a blender. A little tip is to cream the (room temperature) butter on its own in the bowl for a good 5 minutes as it's much creamier and easier to work with them. Add in the icing sugar gradually and any flavouring you may want, I went with basic vanilla bean paste. You can also add food colouring if you want. On top just  scatter some of the confetti sprinkles you used earlier and a sprinkle of glitter if your feeling fancy! Haha. 

There you have it - quick, easy and yummy funfetti cupcakes.
